I am following my New Year resolutions. For the first time in my life. I honestly do and I am very proud of myself. I know that it’s just 8th of January but I’ve started in a middle of December 2013th. And I rocked it!
Time passes so fast, 2013th is gone and in a week I’ll be leaving Barcelona. I’ve seen so many beautiful places over here, that I feel that my batteries are charged for a whole year. You can see some pictures on my not food related blog if you like.
Today’s recipe is an awesome one. I saw something similar on Food52 some time ago and it sticked to my memory. It’s healthy, easy to make and yummy. Polenta cakes are a good base for a breakfast. I made mine sweet, but sour with fried onion or mushrooms or rucola and salmon will be perfect as well. So many possibilities that you need to try it. You could add some raisins to polenta while it’s cooking, to make it more sweet as well.
You will need for polenta cakes:
- 1/2 cup polenta
- 1 cup milk (you may replace it with water)
- 1 cup water
- pinch of salt
- olive oil for frying
- ricotta, mascarpone or cottage cheese
- apple, cut in thin slices
- 1 tsp of honey
- few walnuts, roasted
It is all very easy to make. In a pot place polenta, milk, water, salt and bring it to boil. Then reduce the temperature to low and cook for about 10-15 minutes until it’s thick and water evaporates. Place polenta mix in a baking dish (like 20cm on 20cm, but each medium dish will be ok) and leave it to cool down. When it does it will be thick and will achieve a texture of cake already. Cut it in squares, heat a frying pan with an olive oil and fry on each side until golden. I served mine with mascarpone, apple, nuts and a bit of honey.
